Welcome to today’s edition of Carol’s Corner. Hard to believe this is already the start of my third week of blogging. It has been a very rewarding time for me and I hope I can continue to be a source of inspiration and motivation for all those in need. Totally love how I look in this picture. A year ago never liked how any picture turned out. Someone mentioned the other day upon seeing my picture that they loved my confidence, and I was surprised that they saw this in me by seeing me in a picture. Inside I do have a confidence that I haven’t felt in a really long time . I guess I never thought about a picture being able to convey that. I wish for all of you to have the joy & the inner confidence I feel since I began this journey a year ago. Every one of you have the tools you need to change your life and to be a better healthier you. You just have to believe in yourself. When you truly believe you can do something you have the start of everything you need to achieve your goals.
In this section of the blog today, I will showcase two more Leslie workouts. The first offering, Walk Off Even More Weight features the use of a weighted belt. I love this walk booster by the way. You could wear it as part of any workout. This was produced in 2009. It consists of two different two mile walks. The first walk features 15 minute miles , while the second is a faster paced set of 12 minute miles. As usual it starts with a gentle warm up walk, great walk combinations, a cool down walk , and stretches for a healthy end to your walk. Total time if doing both walks is 53 minutes. The second one is like having 5 separate Dvd’s . It’s called the Ultimate 5 Day Walk Plan. This was produced in 2012. If done all at one time it would run 91 minutes and would total 15 miles, but is meant to utilize 1 workout per day , consisting of a daily walk and a daily strength section. Monday is a 3 mile walk + Ab session. Tuesday is a 4 mile walk+ Arm session. Wednesday is a 1 mile walk+ Leg session. Thursday is a 2 mile walk+ Chest & Body session. Friday is a 5 mile walk + Full Body stretch. Do this for five days in a row and you will have One BIG calorie burning week.
The final section in today’s blog will be a recipe from Weight Watcher’s 5 Ingredient 15 Minute Cookbook. It is Spiced Orange Chicken. The ingredients used are 4 (4-ounce) skinless , boneless chicken breast halves, 1/2 cup orange sections in light syrup , drained and coarsely chopped, 1/4 cup orange juice, 3 Tbs. Low -Sugar Orange Marmalade, and 1/4 Tsp. Ground Cinnamon. You also need 1/4 Tsp. salt & 1/4 Tsp. Pepper. 1. Flatten chicken breasts between 2 sheets heavy duty plastic wrap to 1/4 inch thickness , using a meat mallet or rolling pin. Sprinkle with the salt & pepper. 2. Coat a large nonstick skillet with cooking spray, place over medium-high heat until hot. Add chicken, cook 3 to 4 minutes or until lightly browned. Turn chicken, reduce heat to medium-low, and cook 2 to 3 minutes or until done. 3. Add orange sections & remaining ingredients to skillet. Cook 2 to 3 minutes or until orange mixture is thoroughly heated. To serve, spoon orange mixture over chicken. Makes 4 servings. Each serving is 3 WW Points or 155 calories per serving. Serve with your vegetable of choice and a warm dinner roll. Hope you have enjoyed today’s offering from Carol’s Corner. Get out there and write the story of your journey. Carol, nice blog today!! I agree about the confidence. It is so important to feel good about yourself inside and outside. I really like the posting of the DVD’s. I have the 5 day walk DVD and several others but I am always looking for new ones for the variety of the workout.

Hi Carol! I agree that you show confidence in your photos. It must feel amazing to see the results of all your hard work! I love the 5 day walk plan workouts, it’s fun to pick my own. The red mile is my favourite!
