CAROL’S CORNER

Well here we are again for a new edition of Carol’s Corner. Hope everyone survived the weekend. As you know from yesterday , I was at the brink of total exhaustion . I went to bed and didn’t get up till 4:30 this afternoon. I guess that says it all. Today’s pic, shows the last of my thrift store purchases of a few weeks ago. Again totally love the colors. I don’t know how , but I managed to get my steps in today , even after my late start. The last 100-200, had to jog around upstairs where I was cleaning and taking down the fall decorations , to hit it by midnight. I just had to make it. My workout will come after I get this blog done. I really love my Fitbit. Sure glad I made it known I wanted one. Now , I’m writing my blog at Denny’s. Still have to clean downstairs at the house , but here I can sit by myself and think., with no mess around me. Having my second meal of the day which I hope to work off after I clean . That brings me to my second picture which I’ll explain after I put it up.

When I decided to go out, I was dressed in my exercise clothes which included these leggings, a lavender Cami Shaper, and flip flops. I knew had to do something to still look presentable. They know my story at Denny’s. And I wouldn’t go out looking a mess at all any more because I feel I Have a testimony to keep up. So I looked through my closet real quick and put on this sweater(also a thrift store find), found some jewelry that went quite nice with it, and my go to boots for this winter season. Took me just a few minutes to go from exercise clothes to a cute looking outfit. This is something everyone should strive to do, no matter where you are presently, in your journey. Not only will people see you differently, but you will feel differently about yourself. You will find yourself in better spirits, when you take the extra time to look your best. You will feel more motivated to continue on the path you have chosen to better yourself both physically and emotionally. I had been going to talk on a different subject, but this one just seemed to have happened, so just decided to go with the flow. Wherever you are in your journey, take the extra time to consider how you present yourself when you leave the confines of your home. Maybe there is someone out there, who YOU might be able to help. If you take pride in yourself at any weight you might be at the time, people are more apt to listen to what you have to say and you will feel so much better about yourself when you do. I know I talked about this before, but think sometimes things just need to be touched on again , and it just felt like I was supposed to talk about it again, after I had to make a quick change to leave the house. Now onto a recipe which I promised you days ago. For those of you who might like to bake, I picked out something that could be used for the holidays. They are called Almond Spice Cookies. The picture will be at the end of the blog. They use few ingredients and are very simple to make. They are slightly -chewy cookies with the flavors of a hermit cookie. Ingredients are as follows: 1. 2 cups Almond Meal (they make almond meal flour) 2. 1 1/2 Tbs. Apple Pie Spice or 1 tsp. Cinnamon, 1/2 tsp. Nutmeg & a pinch of Cloves 3. 1/2 tsp. Salt 4. 1/2 cup sugar equivalent (something like Splenda) 5. 1 large egg 6. 1/2 tsp. vanilla 7. Artificial sweetener to sprinkle on top, again Splenda is a good choice, and optional, is sliced almonds to garnish top of cookies. Heat oven to 325 degrees. Combine all dry ingredients. Add the wet ingredients, and combine well, until mixture has formed a large ball. Form balls about one inch in size. Flatten with hands or a spoon to about a 1/4 inch thickness. Sprinkle sweetener on the tops. Place on baking sheet covered with parchment paper, or alternatively grease the baking sheet . Top with sliced almonds, if desired. Bake 10 to 12 minutes or until cookies are slightly brown on the bottom. Makes 2 dozen cookies. Each cookie has a little over half a gram of effective carbohydrate plus 1 gram fiber, 2 grams protein, and 50 calories. This is a new recipe and have to try it myself , but it sounds really good.
